Blackened Carrots Recipe Card

Ingredients

  • 5 large carrots
  • ¼ cup olive oil
  • 2 T honey
  • ½ to 2 tsp curry powder (balti, garam masala, dealer’s choice)
  • Water
  • salt and pepper
Instructions
  1. Peel the carrots.
  2. Cut into sticks
  3. Heat the olive oil on medium high in a stainless or cast iron pan.
  4. Add the carrots in a single layer, trying to make as much contact with the bottom of the pan as possible and brown/blacken to preference. There’s the Maillard reaction going on here so sugars in the carrot are caramelizing.
  5. Add in the honey and the spice of choice then add in 1/8 c of water
  6. Cover and let cook another 5-10 minutes until carrots are glazed and cooked through
  7. Sprinkle with salt and pepper to taste
