Ingredients
- 5 large carrots
- ¼ cup olive oil
- 2 T honey
- ½ to 2 tsp curry powder (balti, garam masala, dealer’s choice)
- Water
- salt and pepper
Instructions
- Peel the carrots.
- Cut into sticks
- Heat the olive oil on medium high in a stainless or cast iron pan.
- Add the carrots in a single layer, trying to make as much contact with the bottom of the pan as possible and brown/blacken to preference. There’s the Maillard reaction going on here so sugars in the carrot are caramelizing.
- Add in the honey and the spice of choice then add in 1/8 c of water
- Cover and let cook another 5-10 minutes until carrots are glazed and cooked through
- Sprinkle with salt and pepper to taste
